Roasted Cauliflower with Garlic and Chipotle Sauce
Perfect as a main course or a side dish to accompany meat or fish.

1 large cauliflower
4 tablespoons olive oil
3 tablespoons Good Things In Jars Garlic Sauce
3 tablespoons Good Things In Jars Chipotle sauce
1 handful chopped coriander
Instructions
- Turn on the oven to broil at 250c.
- Put the olive oil in a large baking pan.
- Cut off the leaves of the cauliflower and cut the rest into thick slices, and place in the pan.
- Mix the garlic and chipotle sauces together and brush a thick layer onto the cauliflower.
- Place under the heat for 7 minutes, or until the cauliflower starts to burn on the edges.
- Turn over, brush on the rest of the sauces, and cook for another 7 mins, or until the edges start to burn.
- Garnish with the coriander and serve.
Chipotle Sauce
We call this sauce the secret weapon because it’s so easy to use, and goes with so many different foods. Throw it on chicken, fish or beef before you cook it. Throw a few spoons into whatever you’re sauteing or stir frying, or just put a spoon on your plate as a condiment. It adds a blast of flavor to everything!
